Flatbreads are very common around the mediterranean and the Middle East. The Italians call their version “Piadina”. This very simple dough gets rolled out very thin before you grill it in a grillpan, a barbeque or on a griddle. You can wrap a million different things into these breads, and create beautiful starters, main dishes or – like in this case - a sunday brunch snack.

Ingredients: 1.5 cups of unbleached flour, 0.5 cup water, 0.5 teaspoons of salt, 2 tablespoons of Extra Virgin olive oil, 1-2 balls of fresh mozzarella, prosciutto, 1 large ripe tomato, fresh basil, salt & pepper
- place the flour, the water, the salt and the oilve oil into a food processor with a plastic mixing blade. Mix for about 2-3 minutes, until a dough-ball forms (adjust with a few drops of water if you have to). You can also mix and knead with your hands, approximately 5-6 minutes.
- Cut the mozzarella and the tomatoes in slices, chop the basil roughly.
- Lightly oil the dough-ball and wrap it in plastic. Let is rest for 30 minutes.
- After the resting time, cut dough in 4 pieces, place on a floured surface and roll out every piece very thin.
- Spray a grillpan with olive oil and place on high heat. As soon as the oil starts smoking, place the first bread into the pan and grill for about 2 minutes.
- Turn around and place the mozzarella, the tomatoes a slice of prosciutto and the basil on one side of the bread. Season with salt & pepper.
- Turn heat to medium and let the bread grill for 2 more minutes.
- Flip the empty side on top of the side with the cheese and tomatoes and serve immediately.
