Lima bean soup with crispy Prosciutto

I’m still in Europe, but I made this soup last week in Miami and I didn’t have time to post it back then. Well, here it is now – a beautiful and very simple Mediterranean bean soup. These beans have to be soaked, so you have to make up your mind a day in advance. The actual cooking procedure is very easy.

I saw this idea with the crispy Prosciutto somewhere recently, but I can’t remember where. It could have been a cookbook, a food magazine or a blog (I read plenty of all of the above). Whoever came up with this fabulous idea – please forgive me for not mentioning you here.

Other people's kitchens: George's seared duck-breasts with black truffle-mash

I’m currently on a quick trip through Europe and I’m eating out 95% of the time. However, there are a few things I’d like to share.

This recipe is slightly on the heavier side – in two ways. If you watching either your calorie intake or your budget – go away, run for cover, this one is not for you!

My friend George made this for me at his house, along with a fabulous almond cake (will follow…). While we were sitting in his warm dining room, the outdoor temperature was about 25 Fº, and we could see the snowflakes hitting the windows. A good enough excuse for some solid winter-comfort-food, right?

Sunday breakfast: Scrambled eggs with graved lax, blueberry yoghurt & mint

Making “graved lax” is a on old tradition you will find all over Scandinavia. Salmon is cured with salt, sugar, cracked peppercorns, cracked juniper berries and fresh dill. After refrigerating for at least 2 days the salmon is sliced very thin and traditionally served with a special mustard-dill sauce.

For our breakfast we went the easy way and got graved lax at the supermarket, where you can find it in convenient 4 oz packages.

Cauliflower soup with roasted garlic and sunflower seeds

Saturday. The weather is beautiful, the phone is quiet, perfect time for a nice little lunch in the shade. I like pureed soups very much. They are easy to make and are usually best when kept simple, without a lot of ingredients.

With small modifications, you can use this recipe for broccoli, carrots and many other vegetables. This particular cauliflower soup gets a wonderful, nutty note from the roasted garlic and the sunflower seeds.
