A delicious starter for hot summer days. Make sure you buy mangos that are not too ripe, so they won’t fall apart when grilling them.

Ingredients: Mojo marinade, shrimp (fresh, peeled), mango, onion, red bell-pepper
- Marinate your shrimp in Mojo for about 2 hours before using them
- If you use wooden skewers, soak them in water for about 30 minutes before using them, it will prevent them from burning
- Cut mango, onion and peppers in small bite-size pieces
- Stick pieces on skewers, season with salt & pepper and drizzle with some Extra Virgin olive Oil.
- Grill on a barbeque or a grill-pan at medium-high heat for about 5-8 minutes (depending on the size of the shrimp)
- Sprinkle with a little chopped cilantro and serve
