Thai spiced grouper with curried Quinoa

Yes, it’s a bit unusual, I admit. I have not had curried quinoa before, I just thought I’d give it a try. Turned out very nice!

Vietnamese crab and asparagus rolls

A wonderfully light and fresh starter or snack for those warm summer days. These rolls get even crunchier if you chill the ingredients in the fridge for some minutes.

Fresh and crunchy salmon burger

My after-gym-lunch today was this nice and crunchy grilled salmon burger. This one is inspired by “Joe Allen’s” (a restaurant in Miami Beach)  fabulous grilled salmon sandwich with cucumber and lettuce on ciabatta. Chilled romaine and cucumber, warm grilled salmon, crunchy bun – nice!

Barbequed swordfish with roasted potatoes and asparagus

Swordfish is a wonderful, firm fish with a very nice texture. However, you have to be careful not to overcook it. Just like Tuna it has a tendency to get dry when overcooked.swordfish-lemon-asparagus-4-shots

The freshest summer salad - ever.

VERY skeptical facial expressions from both my wife and two friends of ours when I presented this salad on saturday afternoon. “So, there is garlic AND fruit in this salad, huh?”. “Grapes and basil. Really?”.
I have to admit – the mixtures does sound a little unusual at first, but this is about the freshest salad I have ever had on my plate. Try it – it’s amazing.

By the way – everyone LOVED it and wants to have it again very soon… romaine-and-fruit-salad
