What’s for dinner tonight?

No time to shop, no time to cook, but we do want a variety of easy-to-make, delicious and healthy food. Sounds familiar? This little kitchen diary shows our way to deal with a busy schedule on the one hand and a desire for good food on the other. Simple but tasty recipes, illustrated cooking instructions, and a few basics for those of you who think kitchens are scary monsters. Enjoy!

Marinated shrimp with crispy rice-cakes and ginger

After a lot of easter food, restaurants and dinner with friends it’s time for something light! I’m using a tool you may not have at home, but don’t worry. You can just as well form the little cakes with your hands, I’m sure they’ll be pretty as well.

This dish requires some marinating time. Other than that – quick and easy dish, done in a few minutes.
We were trying to keep dinner very light tonight. If you are a little more hungry, just add some sauteed vegetables (maybe in a little sesame oil) as a side-dish.

Spinach Ricotta ravioli with walnut-sage butter

Weekend, sweet weekend. Finally I have more than 2.5 minutes to cook!

This dish is not a fast one, it requires some time and effort. Is it worth it? No doubt!

I do believe making your own spaghetti or fettucini is really kind of wasted time. Nowadays you can find the most amazing Italian pasta in either small Italian specialty stores or some of the larger organic markets. However, Ravioli, Tortellini or any other stuffed pasta is a whole different story! This is where ingredients and preparation make all the difference. Try it yourself, you will see.

The first time I tried to make my own pasta (many years ago) I ended up ordering takeout pizza. The kitchen looked like a battlefield, and “food” was not the first thing that hit my mind when looking at those thick little rubberballs that were floating in my pot. Once I bought a pasta maker, things changed completely. I highly recommend getting one of these machines (around $80 online) if you want to make your own pasta.

Rosemary chicken with garbanzo-garlic mash

I know, I’m currently stuck in a Mediterranean theme. It’s probably because we had a lot of Asian restaurant dinners recently (Sushi, Thai), so when I cook at home, I like to make something different. Then again, when we go for dinner we don’t want Mediterranean again…. vicious circle! We will have to break it …. soon.

This is a very nice and simple chicken dish with classic rosemary, garlic and lemon flavors.

Baked Salmon with walnut-arugula pesto

This is another one of those dishes that are done in no time. You can substitute a nice firm white fish instead. While a traditional pesto would contain cheese, like parmesan or pecorino, I skipped the cheese on this one. I personally don’t like mixing seafood and cheese, I just don’t think the two components work together very well.

The mystery of the broken blade

So I bought these really tough steaks the other day….
