Similar recipes traditionally use minced beef, lamb or a combination of meats. I wanted to try a healthier version of this, using salmon. It works very well! I know, I’m currently stuck in a Mediterranean theme. It’s probably because we had a lot of Asian restaurant dinners recently (Sushi, Thai), so when I cook at home, I like to make something different. Then again, when we go for dinner we don’t want Mediterranean again…. vicious circle! This salad is easy to make and has some beautiful, typical Mediterranean flavors that make this dish a perfect, light and healthy summer lunch or dinner.
